Chipotle Bison & Pumpkin Chili

Cook Time: 4-6 hours

Ingredients:
2 pounds of ground bison (can sub beef, chicken or turkey)
52g honey
4 TBS chili powder
2 TBS smoked paprika1 chipotle in adobo sauce, diced (about 18g)
1 tsp cinnamon1 tsp garlic powder1 tsp onion powder
2 tsp sea salt
2 bay leaves
12oz beef, chicken or vegetable stock or broth
2 tsp apple cider vinegar
2 tsp coconut aminos (can sub worchestershire if not gluten free)
28oz can fire roasted crushed tomatoes6oz can tomato paste
14oz can pumpkin puree (or 400g diced fresh sugar pumpkin)
14oz can low sodium pinto or black beans, drained

Instructions:
1. Add ground bison to the bottom of your pot and brown. I use this 360 Cookware crockpot which goes from stovetop to the slow cooker base. If you don’t have one of these just brown your meat in a pan then transfer it to your crockpot.
2. Dump the rest of the ingredients into the crockpot and stir well.
3. Cook on high for 4 hours or low for 6 hours.
4. Remove the bay leaves and serve with cheese, cilantro, avocado, radish or corn chips! Whatever toppings you desire. Toppings are not included in the macros.
