Beef Sweet Potato Bowl

Ingredients:
2 pounds 90/10 ground beef (ground turkey can work!)
2 packets taco seasoning (Siete is 💣)
3 large sweet potatoes or yams (~800g)
10g olive oil
Salt and paprika to season
1 container of cottage cheese
3 Avocados
Hot honey
Red pepper flakes

Instructions:
For the meat -
1. Brown the meat in a pan over medium heat until fully cooked.
2. Add in the taco seasoning (1 packet per pound of meat).
3. Stir in 1/4-1/3 cup water to help seasonings mix in.
4. Set aside or store in a container.


For the roasted sweet potato/yams -
1. Scrub the skin clean with water and dice into small cubes. You can peel if you dislike the skin.
2. Spread out on a roasting pan or lined cookie sheet and drizzle with the olive oil, then sprinkle with salt and paprika.
3. Bake at 400 degrees for 30-40 minutes until tender.

To prepare your bowl:
125g taco seasoned ground beef
80g roasted sweet potato/yam
60g cottage cheese (Good Culture)
40g avocado
8g hot honey
Sprinkle red pepper flake
