High Protein Banana Cream Pie Bowl

Ingredients:
100g banana (1 small banana, divided in half)
Squeeze of lemon juice
170g nonfat plain Greek yogurt (I use Siggi’s)
12g whey protein powder (I use Earth Fed Muscle Vanilla)
1/2 tsp vanilla extract (only needed if using plain whey)
15g So Delicious CocoWhip (or homemade)
18g shortbread cookies (I use Siete Mexican grain free cookies)
2g unsweetened shredded coconut
Instructions:
1. In a bowl or container (I use these 12oz Weck jars), take half your banana and mash it up with a fork until it’s almost in liquid form. Add a squeeze of lemon juice over the top and stir. It prevents browning but I also love the way the flavors complement each other.
2. Add the yogurt, whey, and vanilla extract and stir again.
3. To keep it simple, add the toppings right into your bowl and eat. To build a parfait style treat as shown, layer in half the yogurt mixture, a layer of 3 cookies and sliced banana, then the other half of the yogurt mixture. Top off with the Cocowhip, any leftover slices of banana, 1 cookie crumbled up on top, and finally the shredded coconut.
Notes:
- You can change out the yogurt for another kind, like coconut yogurt.
- You can also change out the whipped cream for regular dairy whip!
- If you want to add more fiber to this meal stir in 8g of chia seeds when combining the mashed banana and yogurt mixture and let it sit in the fridge for a few hours to create more of a pudding texture. This will add 1P 0C 2.6F and 2.5 fiber to the macros above.
