Healthier Chicken Salad

Ingredients:
226g (8oz) cooked boneless skinless chicken breast* (see notes)
25g mayonnaise
25g plain Greek yogurt
1 tsp Iemon juice
50g sweet onion, diced
25g celery, diced
1/4 tsp crushed red pepper flakes

Instructions:
1. Chop the chicken into bite sized pieces.
2. Add the rest of the ingredients and mix well.
3. Serve open faced on sourdough, in a lettuce wrap, or eat it with a spoon!

Notes:

- You can opt for using boneless skinless thighs, it will give you higher fat macros so adjust recipe accordingly.

- You can use a rotisserie chicken from the store if you do not have any chicken prepped, but my favorite basic chicken for this recipe is seasoned and smoked on the Traeger! I use a mix of 30g brown sugar, 10g salt, 1 tsp each of paprika, black pepper, onion powder, garlic powder and 1/2 tsp mustard powder. I make up about 2 pounds worth of chicken with this seasoning mix, smoke at 225F for 30 minutes, then increase temp to 400F and smoke for 15-20 more minutes or until internal temp is 165. I use some of the prepared chicken in this recipe and use the rest for other dishes!

- I only make up 2 servings at a time so the chicken and mayo mix stays fresh, but you could definitely double this recipe if you needed up make up more at a time.
