Lemon Chia Pudding

Ingredients:
170g nonfat plain Greek yogurt
12g lemon juice + zest of 1/2 lemon
2oz unsweetened coconut milk 12g whey protein (I used Earth Fed Muscle vanilla)
12g honey
1 tsp vanilla extract
24g chia seeds
Pinch of salt and turmeric
Optional toppings included in the macros listed above: 60g blackberries, 25g CocoWhip, 10g shortbread cookies/graham cracker
Instructions:
1. In a sealable container (I use these 11oz Weck jars), mix all your ingredients together, cover and let sit overnight for the chia seeds to soak up the liquid and become more pudding like.
2. When ready to eat, stir again and add the optional toppings. All kinds of fruit work here. Blueberries are also a big hit!
Notes:
- You can change out the yogurt for another kind, like coconut yogurt and adjust your macros and recipe.
- You can also change out the whipped cream for regular dairy whip!
