Greek Yogurt Parfaits

Cook Time: 2 hours to refrigerate the chia pudding layer


Ingredients for the parfait:
160g nonfat plain Greek yogurt
12g whey protein (I used Earth Fed Muscle vanilla)
70g basic chia pudding (recipe below) 92g fruit (I used Dole fruit cups drained of the liquid)
35g granola (store bought or this homemade version)

To make the chia pudding (makes 4 servings):
8oz whole milk (can sub dairy free, changes macros)
40g chia seeds
8g maple syrup or honey
2g vanilla bean paste or vanilla extract

Instructions:
1. In a sealable container (I use these 11oz Weck jars), mix all your ingredients together, cover and let sit for about 10 minutes. Then shake/stir again so the chia seeds do not clump up at the bottom. Stick in the refrigerator for at least 2 hours or overnight for the chia seeds to soak up the liquid and become more pudding like.
2. When ready to use, stir again and add to your parfaits.

Notes:
- You can build all your parfaits early and store in the fridge, then add your granola right before eating. I travel with my granola in a separate container for this reason.
